Duck Foie Gras

We get our Duck Foie Gras directly from our producer in the Gers, shot the day before and wrapped carefully in paper. We prepare the lobe, and we Flavour season with a mixture of salt and pepper. We let marinate in Cognac and Muscat wine a few hours and then we bake it in his bowl at low temperatures.

Duck Foie Gras is then left aged in cold room for a few days as perfumes grow
